Banana Choc Chip Cookies

Enjoy these delightful cookies with a perfect balance between the banana and chocolate! These cookies have a soft, fluffy, cake like texture and make a delicious, homemade, sweet treat. I like to use giant chocolate chips for that proper chocolate bite, but you can use any size you like.

Ingredients
170g (1 1/4 cup) self raising flour
140g (1 cup) extra large chocolate chip cookies - you can use small choc chips too if you prefer
100g sugar (1/2 cup) - you can do all brown sugar, all white sugar, or I go half (50g) of each
70g (1/3 cup) unsalted butter at room temperature
1 large overripe mashed banana
1 tsp maple syrup or vanilla extract
1 egg, whisked

Method
Turn on oven to 180 degrees Celsius (350F) and line a baking tray with parchment paper.
In a large bowl, add the butter and sugar/s and beat with your electric mixer for about 2 minutes or until fluffy. Add your egg, mashed banana and maple syrup and beat again until well combined.
Add your flour and chocolate chips and stir until the mixture is a smooth and creamy texture.
Chill your cookie dough for 15 minutes.
Scoop the dough onto your baking tray and with the back of a spoon, gently press down on the centre so that the dough flattens slightly.
Bake for 10-15 minutes, or until lightly browned.
Allow to cool for 5-10 minutes before enjoying.
